Ingredients:
1 cup whole wheat flour
1 cup oat bran
1 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon all-spice
1/2 teaspoon cinnamon
2/3 cup grated carrots
1/3 cup maple syrup
1 cup water
1/4 cup canola oil
Step 1. Preheat oven to 275 degrees
Step 2. In a large mixing bowl, combine all of the dry ingredients and the grated carrots. Add all of the wet ingredients. Mix well.
Step 3. Pour the batter into a lightly oiled muffin pan and bake for 25-30 minutes.
